3 green recipes using matcha
You might have noticed that we are totally obsessed with matcha!
It’s a well-known superfood, a natural energy booster and jam-packed full of antioxidants.
Although it’s most often used as a hot drink/healthy coffee alternative, its light, earthy flavour also makes it the perfect ingredient in refreshing desserts.
We’ve created 3 delicious and nutritious treats all using matcha. Skip the artificial colourings and inject some revitalising goodness into your body!
Matcha Ice Cream
Ingredients
- 1 can (400g) coconut milk
- ½ cup rice milk
- ½ cup cashews soaked (overnight in water)
- ½ cup maple syrup
- 1 tbsp Vivo Life Matcha
- 1 tbsp lime juice
- Pinch of salt
Method
- Place all ingredients in a high speed blender and blend until smooth.
- Transfer the mixture into the fridge for 15 minutes to cool.
- Add contents to ice cream maker and follow instructions. Alternatively, if you don’t have an ice cream maker, use an electric whisk until peaks start to form, then transfer to the freezer for 1-2 hours for a ‘soft serve’ consistency.
- Enjoy!
Matcha Coconut Bounty Bars
Ingredients
- 5 cups desiccated coconut
- 2 tbsp maple syrup
- ½ tsp Vivo Life Matcha
- Splash of vanilla extract
- 50g dark chocolate
Method
- Combine the coconut, maple syrup and vanilla in a bowl.
- Add matcha and mix well. Taste the mixture and adjust sweetness or add a pinch of salt if desired.
- Pour this into a lined container or brownie tin and transfer to the fridge for an hour to chill.
- Gently melt the dark chocolate, then pour over the top of the coconut mixture.
- Return to the fridge or freezer to set.
- Slice into squares and enjoy!
Matcha Chocolate Chip Shake
Ingredients
- 2 frozen bananas
- ½ cup spinach
- ½ tbsp cacao powder
- 1 medjool date, pitted
- Handful of freshly chopped mint
- ½ scoop Vivo Life Raw Cacao Perform
- ½ tsp Vivo Life Matcha
- 1 tbsp cacao nibs
Method
- Add all ingredients except the cacao nibs to a high speed blender with enough water for your desired consistency. Blend until smooth.
- Pour into a jar, stir in the cacao nibs for a chocolate chip texture, and garnish with a few extra mint sprigs!
