BBQ Chocolate Fudge Brownies
When I think desserts, one of the first things that usually comes to mind are of course, chocolate brownies. I mean, everyone loves a brownie right?
But these aren’t just any brownies! As the sun is out again this week, these tasty little treats are essentially a raw brownie that you can cook either under the grill or on the BBQ to create the ultimate gooey, fudgey, molten chocolate filled cake and with very little prep work too!
What’s more, even though they look incredibly naughty and indulgent, these are actually made up of only 5 ingredients and are completely dairy, gluten and refined sugar free! So in this case, you really can have your cake and eat it too!
The main body of the brownies is a combination of dates and pecan nuts; which together create an almost caramel like flavour with slight nutty undertones running through it. Of course, I’ve then added in some amazing raw cacao powder for that gloriously rich chocolate flavour, and some almond butter to help bind everything together… and just because it’s delicious!
Dates are a great source of fibre and natural sugars and the nuts provide a good source of healthy fats and plant based protein, so you can also treat your body as well as your taste buds in this case. Just to make these even more spectacular, the centres are filled with a little square of raw chocolate, so that when heated, this melts and creates a molten chocolate centre… yum!
Here’s how to make these for yourself!
BBQ Chocolate Fudge Brownies
INGREDIENTS:
- 1/2 cup pecans
- 1/2 cup dates
- 1 tbsp almond butter
- 1 tbsp cacao powder
- 1 raw chocolate bar of your choice
METHOD:
1) Add the nuts into your food processor and blend for a few seconds to crush them slightly.
2) Next, add in the rest of the ingredients, apart from the chocolate and blend until everything is well combined and starts to form a sticky, gooey mixture.
3) Break your raw chocolate into small pieces. Take some of the brownie mix in your hands and shape it around a square of chocolate. With the chocolate inside of the brownie ball, mould this into a small square shape and set aside. Repeat with all of the mixture.
4) To cook these, you can either place them onto the BBQ in some foil, or line a tray with baking parchment and heat them under the grill for a few minutes. You want them to be slightly crisp and darkened on the outside and the chocolate to be runny in the centre.
